Greetings from D.C. Central Kitchen! I’m thrilled to be contributing my inaugural post on the CKP blog. As Healthy Returns Coordinator and Nutrition Educator here at D.C. Central Kitchen, I have the opportunity to teach Washington, D.C. residents young and old about healthy eating, however, I do not usually get to work with college students. So allow me to share my expertise with all of you.
As a proud graduate of Northwestern University, a Campus Kitchen host and quite possibly the most depressing place to spend the winter, I know what it’s like to have a case of the “Februaries.” When you are feeling tired, stressed, and just generally low, don’t let those healthy eating habits slip! Eating right will help you stay healthy when that cold is going around the dorm, keep you alert during that three-hour lecture, and prevent those late-night snacks from taking residence on your waist.
I know that you all know your way around a university dining hall. So here’s a fun and healthy recipe to make in the dining hall that will fight-off those winter blues.
And remember, Red Bull and Doritos are not a food group!
Dining Hall Delicious: Karma-el Apples
What goes around comes around, baby! Take care of yourself, so that you can continue to provide your clients with delicious, nourishing meals.
What You’ll Need:
1 Apple (preferably Granny Smith)
1 small bowl of Carmel sauce (from the sundae bar)
Chopped Nuts and Chocolate Chips on a small plate (from the sundae bar)
What to Do:
1) Cut the apple into slices
2) Heat Carmel sauce in the microwave for roughly 25 seconds. It should be hot, but not burned. (Note: cooking time varies depending on whether your university chose to install new benches on the quad, or replace old, poorly-functioning dinning hall microwaves)
3) Dunk apple slices in Carmel sauce, lightly coating the skin of the apple. Immediately dip apple in nuts and/chocolate chips.
