
Now if you had to guess where this was, you probably wouldn’t say the middle of the UCF Campus. But then again you’d be wrong.
I just spent the last two days at UCF meeting with various students, administrators and faculty on campus. I have to say, they were great. There were some initial concerns about finding students that would be interested in getting a Campus Kitchen started. With 80% of students at the school engaged in a civic way already, it seemed like the student momentum that we needed might not be there.
This week I got a chance to meet with about 10 students, and it became clear really quickly that CKP is a very real possibility at UCF. It could go a long way in doing some great work on their campus. With so many groups engaged in so many ways there often aren’t collaborative projects between various campus factions. But as most Campus Kitchens do, there are tons of relationships and partnerships waiting to happen. As at most schools, I continue to be inspired. This time by a group of students that are willing to pull together a leadership team in the next 4 weeks to try and prepare for next year.
But wait, there’s more. I also got a chance to meet with the University of Central Florida Sustainability Alliance and wow was I impressed. Take a look at all the programming they have going on. I heard about recycling programs, wetlands, community gardens, farmers markets, environmental design projects in buildings and much much more. In the name of sustainability month on our blog, take a look at everything they are doing, and hopefully they can serve as an inspiration to other sustainable programs you might want to run.
I just want to close out this post by saying thank you to everyone at UCF. Amy Zeh and Nicole Holler did a great job pulling together all the interested students and faculty. They are truly committed to seeing a Campus Kitchen start in the next few months. Hopefully we’ll see that happen. And until then, everyone at UCF keep up the good work.
