Hopkins students explore Food Justice over Spring Break

March 30, 2011 – 10:38 am

This past week 10 Hopkins Students stayed in Baltimore for an Alternative Spring Break hosted by the Center for Social Concern, focusing on Food Justice and Poverty in Baltimore. One of two trips known as “Breaking in Baltimore”; the other had a public health focus.  I got to hang out with the group and go with them on their various site visit and volunteer activities!  The week was a lot of fun and an incredible learning experience for all the students involved.  Highlights of the trip include:

Here are some photos of the group throughout the week!

Wake Forest ASB at CKJHU!

March 17, 2011 – 10:29 am

Last week  I was so happy to host alternative spring breakers from Wake Forest University at our volunteers shifts. The Wake Forest students were here on ASB trip to Baltimore lead by Amy Liang.  As a proud WF Alumi, I was so excited to have some Deacon Spirit invade Baltimore. The students had a busy week, volunteering each morning at the Franciscan Center, as well as visiting Samaritan Women’s Farm.  They also assisted CKJHU  at our gleaning prep shift, Wednesday Cooking Shift and Friday Cooking Classes.

For me having Wake Forest Students come visit me at Campus Kitchens on a spring  break trip truly comes full circle.  To understand this I have to go back to my sophomore year at Wake when I went on a  Alternative Spring Break trip to New Orleans advised by the then Wake Forest Campus Kitchen Coordinator, Jen Baron. During the long trip down Jen and I talked about Campus Kitchens and I got pumped and excited to get more involved with this awesome project.  Long story short: that summer I interned with DC Central Kitchen, came back from abroad my Junior Spring became a cooking shift leader at Wake Forest and rose to executive board positions at CKWFU my senior year. And now here I am coordinating CKJHU for my VISTA year, and it all started over spring break.

Check out some pics of those Demon Deacons cooking with CKJHU:

Big thanks to Wake ASB for coming to visit in Baltimore! Go Deacs!

Peanut, Peanut Butter and Jelly!

March 4, 2011 – 4:00 pm

Everyone loves a peanut butter and jelly sandwich, especially CKJHU, we are happy to be back to our sandwich making habits. This Thursday CK student leader, Diane Hwang and I got our gloved hands dirty and whipped out 206 PBJ sandwiches and put them in sack lunches that included peanuts or other healthy snacks.

These Sandwiches were prepared at the Franciscan Center to be handed out on Friday’s as a part of their Warm Welcome Friday’s.   Since they are not open for lunch on Friday’s the Center is now open in the mornings to serve pastries, coffee and offer clients a sack lunch. Campus Kitchens is thrilled to be a part of this new initiative.

Real Foods Conference in Boston

February 28, 2011 – 2:18 pm

This weekend I traveled with students involved in Real Foods Hopkins to Northeastern University for the Real Foods Challenge Food and Justice Summit. The Summit brought together over 500 students from universities and high schools all across the north east to unite young leaders in the food justice movement. We attended workshops, heard inspiring speakers and met other people engaged in exciting food activities on their campus and in non-profits.

Real Food Hopkins is a new student group committed to bringing local, sustainable, humane, and fair food to the Johns Hopkins campus and the surrounding Baltimore area through organizing food advocacy and awareness events, cooperating with the larger food movement, maintaining a sustainable campus garden, promoting community-based learning about food and where it comes from, and donating fresh produce acquired to organizations like Campus Kitchens that feed the local hungry.

Campus Kitchens and Real Foods both have similar missions in food justice and I hope to see more collaboration between our groups in the future!

If you want to get involved with Real Foods Hopkins please contact Raychel Santo at rsanto1@jhu.edu

Then check out our newest video upload to see our volunteers in action chopping up fresh cabbage for the chefs to use in their daily meals! These volunteers are crucial in helping the chefs to incorporate fresh produce into each meal, making the food they serve healthier, which goes right in line with our mission at CKJHU, making healthy, fresh food available to all!

Incredible Edible Vegetables

January 24, 2011 – 3:50 pm

Who say’s kids don’t eat vegetables? After Friday’s cooking class, students at Waverly Middle School sure won’t be.  Volunteers, Margaret, Daniella, Sara and I showed students how to make veggies fun and delicious.  The idea was simple: add Ranch dressing and a bit of fun.

Incredible Edible Veggie Bowls:

Slice Red Bell Pepper half-wise, and remove seeds and insides, you now have 2 “bowls”. Fill the bowls with ranch dressing, cut up healthy carrots and celery and you have edible veggie bowls AND kids eating their vegetables!

Two residents of Stadium Place joined our class Friday to share and learn about healthy eating and of course enjoy some fresh veggies!
